Vegan, sweetened with just maple syrup and loaded with fibre and protein rich chia seeds this is one of my own personal favourite breakfasts. I like to serve mine with vegan yogurt and chocolate granola sprinkled on top for a lovely crunchy contrast. It also works really well with a berry compote or even a spoonful of berry jam.

Dry Ingredients
- 250g Chia Seeds
- 70g Cocoa Powder
- 1.5tsp Cinnamon
- 1/2 tsp Salt
Wet Ingredients
- 1 litre of Vegan Milk (I used Almond Milk)
- 220ml Maple Syrup
- 1.5 tsp Vanilla Extract
Method
- Weigh out your dry ingredients into a large bowl
- Pour in wet ingredients and whisk really well
- Set in the fridge for a few hours or overnight
- Re-whisk in the morning to loosen up
- Serve and enjoy x
