Momma’s Chocolate Chia Pudding

Vegan, sweetened with just maple syrup and loaded with fibre and protein rich chia seeds this is one of my own personal favourite breakfasts. I like to serve mine with vegan yogurt and chocolate granola sprinkled on top for a lovely crunchy contrast. It also works really well with a berry compote or even a spoonful of berry jam.

Dry Ingredients

  • 250g Chia Seeds
  • 70g Cocoa Powder
  • 1.5tsp Cinnamon
  • 1/2 tsp Salt

Wet Ingredients

  • 1 litre of Vegan Milk (I used Almond Milk)
  • 220ml Maple Syrup
  • 1.5 tsp Vanilla Extract

Method

  1. Weigh out your dry ingredients into a large bowl
  2. Pour in wet ingredients and whisk really well
  3. Set in the fridge for a few hours or overnight
  4. Re-whisk in the morning to loosen up
  5. Serve and enjoy x
