Peanut Butter Fudge Bites

These remind me of Pip and Nut Sweet and Salty Peanut Butter and can be eaten immediately or melted into porridge or over pancakes.

Base Ingredients

  • 115g Ground Almonds
  • 100g Peanut Butter
  • 2 tbsp Maple Syrup
  • 1 tbsp melted Coconut Oil

Caramel Ingredients

  • 150g Peanut Butter
  • 2 tsbp Maple Syrup
  • 2tbsp Coconut Oil

Fudgey Topping

  • 175g 70% Chocolate
  • 1 tsbp Coconut Oil

Method

  1. Blend together all of the base ingredients in a bowl
  2. Press into a loaf tray (if not using silicone line with parchment)
  3. Gently melt caramel ingredients on the hob over a low heat
  4. Pour over base and spread evenly
  5. Melted chocolate and coconut oil in a microwave at 360 Watt for 30 second increments
  6. Pour over middle layer blending some of the chocolate with the peanut butter. This will create a fudgey texture
  7. Sprinkle with sea salt and set in the fridge
  8. Once hardened slice and enjoy x
