
These one bowl vegan healthier blondies can be adapted to suit what you have in the kitchen cupboard. So don’t go running out to buy exactly what I used.
For nut butter use any nut or seed butter. For Oil use butter or coconut oil. For the sugar use brown sugar or coconut sugar. For the flour again adapt to what you have and the same applies to the milk.
I used a 8 inch heart shaped silicone mold but you can use any baking tray just be sure to line it if it is not silicone.
Ingredients
- 250g Spelt Flour
- 1.5 tsp Baking Powder
- ½ tsp Salt
- 250g Coconut Sugar
- 250 Crunchy Peanut Butter (gives it that umph!)
- 115g Butter or Coconut Oil
- 1 tsp Vanilla
- 5 tbsp Milk (I used Almond Milk)
- 150g Chocolate Chips
Method
- Preheat the oven to 180 degrees C.
- Melt the butter or coco oil. Combine with sugar in a large bowl. Whisk in peanut butter, vanilla and milk. Sift in flour, baking powder and salt. Stir in chocolate chips.
- Press into tray or mold and bake for 30 minutes. Eat hot out of the oven or allow to cool to cut into squares.
