Momma’s Raisin & Banana Breakfast Cookies

These little mouthfuls of yummy-ness are straight off my catering menu. They are filling and satisfying and absolutely fabulous warm with peanut butter (trust me!). Super versatile you can adapt them to what you have in your cupboard and use up brown bananas and all!

Dry Ingredients

  • 170g Oats
  • 75g Cranberries
  • 75g Raisins
  • 70g Pumpkin Seeds
  • 1/2 tsp Salt
  • Optional add- 30g Ground Flaxseeds

Wet Ingredients

  • 250g Peanut butter
  • 2 mashed Bananas or a mix of 1 Banana and 60g Apple Puree
  • 60ml Maple Syrup

Method

  1. Whisk together all of the wet ingredients
  2. Add all of the wet ingredients, blend well, roll into little balls and press onto a lined baking tray
  3. Bake in a preheated oven at 160 degrees C for 18 minutes
  4. Cool and enjoy (optional drizzle with melted choc ;)) x
